French Country Beef Stew

2 cans stewed tomatoes
2 cans canned potatoes
1 tsp. Dijon mustard
1 can beef broth
1 lb. stew beef, dredged in 2 tbsp. flour
1 – 2 cups baby carrots
½ tsp. salt
¼ tsp. black pepper
1 tsp. thyme
1 tsp. parsley

Brown stew beef, add all ingredients, and simmer for 1 - 1 1/2 hour.
