Carrot Cake

4 large carrots, peeled and grated
1-cup oil
2 cups sugar
3 eggs
1-tablespoon vanilla
¾ cup crushed pineapple
2 apples, peeled and grated
1 cup chopped walnuts (reserve 1 tablespoon)
3 cups flour1-teaspoon baking powder
1-teaspoon baking soda
Dash of salt
Dash of allspice

Mix ingredients well. Pour into bundt pan that has been coated with cooking spray. Bake at 350 degrees for 1 hour. Let cool and turn out onto dish.

Microwave ½ cup cream cheese frosting for 15 seconds and drizzle it over cake. Sprinkle with reserved walnuts.
